1. What is Pacific Style Mexican Cocina?

Pacific Style Mexican Cocina focuses on bold flavors and ingredients from the state of Sinaloa on Mexico’s Pacific Coast. This style of cuisine features warm water wild caught fish like mahi-mahi, tuna, red snapper and shrimp. The seafood is then paired with traditional spices and ingredients such as chile chiltepin, jicama and tamarindo to create colorful, bold dishes that are sure to make your mouth water. Typical dishes of the Mexico’s pacific coast are: estofado stew, marlin quesadillas, aguachile, various ceviches and of course different seafood tacos.

2. What is ceviche?

Ceviche is a seafood dish popular in the Pacific coastal regions of Mexico, Central and South America. The dish is typically made with fresh raw fish or shrimp, which is marinated and cured in citrus juice like lemon and lime then seasoned with various special ingredients.

3. Is it safe to eat raw fish?

The acidity of the citrus marinade causes the fish to cook just like it had been with heat. It gives the fish an opaque and firm texture. 4. What type of fish do you use in you ceviche dishes?

We use only fresh mahi-mahi, tuna, red snapper, curvi, marlin and shrimp of the highest quality.

5. Where do you source your fish?

Mainly we buy our fresh fish from Mexico (Mazatlan, Sinaloa), the US Pacific West Coast and Hawaii.
